Here we have Bibo Runge's fantastic Sekt blended with a splash of red wine to create this delicious, red-rose stained sparkler. We have no idea what it's blended with. After tasting it, every suggestion we came up with was greated by a shake of the head and an enigmatic smile from Markus Bonsels of Bibo Runge. Apparently it's a closely guarded trade secret. All we know is that the perfectly judged "splash" brings just the right amount our sweet, red summer fruits to the party without masking the quality of the Sekt it's based on.

Manually harvested, the grapes are then pressed in a pneumatic press and then transferred to refrigerated vats overnight to allow the sediment to settle. The fermentation starts naturally in the vat and is allowed to continue until the alcohol reaches about 6% . After a light filtration, the wine is bottled and the fermentation goes on, generating the C02 that forms the bubbles until the yeasts are actually killed by the pressure in the bottle (4 bars).
The bottles are then disgorged to remove yeast.

Niall continued with his career, but mother-of-three Fiona decided to plant some vines at the property following a comment by her mother-in-law that the Romans could have grown vines there. The first acre was planted in 2007, with the acquisition of an old cattle farm on the (really quite steep) hill opposite and converting an old barn into a winery in 2016. A third vineyard side since been acquired taking the current area under vine (but not all producing grapes yet) to 58 acres (23ish hectares), still firmly in the ‘tiny’ bracket.
This non-vintage Reserve Cuvée has a minimum of 30 months lees ageing in bottle which is expressed by the toasted autolytic characters of this Pinot dominant blend.
