Being Demi-Sec rather than Brut Cuvee Apolline is an ideal Champagne to serve with dessert, with cakes, or simply during stolen moments between meals..
This cuvee with its glowing, pale golden yellow hue and subtle green highlights is enhanced by an intense string of abundant, small, light bubbles. Its warm, gourmet bouquet with aromas of candied fruit, buns, frangipani and sweet spices combines a hint of honey with an elegant floral touch of fern and jasmine. Its mouth, supple and smooth at the attack, develops in a sweet, full-bodied register.
Champagne Chassenay d'Arce£125.00
The most absolute expression of the style of the House, the Comtes de Champagne Blanc de Blancs is always a vintage cuvee. Made from 100% Chardonnay with grapes from the finest crus of the prestigious Cote des Blancs (Avize, Chouilly, Cramant, Oger, Mesnil-sur-Oger), this cuvee is made only with juice from the first pressing. A small proportion of the blend (5%) is aged in new oak casks, which lends nuance to the harmondy of its delicate toasted notes. With these great Chardonnays from its lands, Taittinger knows to be patient; the Comtes de Champagne Blanc de Blancs waits in the chalk mines of Saint-Nicaise for 10 years before seeing the light of day and overjoying the palates of consumers

The house of Lallier specialises in producing Champagnes by sourcing exclusively from vineyards officially classified Grand Cru and Premier Cru. This is 100% Grand Cru, the Pinot Noir is sourced from the Grand Cru Aÿ and the Chardonnay from the Grand Crus of Avize and Cramant in the Côte de Blancs. The provenance of the grapes enables a low dosage to express the purity and the richness of these terroirs. Using approximately 2/3 Pinot Noir and 1/3 Chardonnay, and a 9g/L dosage, the bottles are matured on their lees in chalk cellars for 24-36 months.
With great complexity and finesse, this has an energising, citrusy palate and delivers an equal measure of ripe, toasty fruit followed by a tasty, elegant finish.

Incredibly dynamic effervescence, so lively you can almost hear it!
Rich and complex aromas with notes of zesty and candied fruit (lemon) mingled with pollen (white flowers), roasted hazelnut and Madagascar vanilla. After aeration, the bouquet develops rich notes of fresh pastries and smoky notes from bottle ageing.
A delicious, concentrated and chalky palate. It shows incredible tension and perfectly honed aromatic precision. The attack is powerful, distinctive and concentrated and reveals a silky, mouth-coating texture, characteristic of the ripe Pinot Noirs from the 2012 vintage.
