The St Pauline is a Lieu Dit which slopes gently towards a small stream. The soil is full of small, rolled pebbles almost sporting a junior Chateauneuf du Pape sort of look. The wine is predominantly Syrah (60%) with equal parts of Carignan and Cinsault making up the balance. This was the wine that first drew our attention to Clos du Serres , there’s power and weight and ‘satisfaction’ here for sure with a really deep cocoa/liquorice heart but crucially there’s also vif… a freshness and inbuilt energy that seems to keep the wine cool, lithe and really drinkable. It’s polished and fine and yet it’s still quite definitely very characterful as well.

Produced by Jean-Marie Bourgeois who is rapidly achieving an international reputation as one of the leading figures in Sancerre and Pouilly Fume; this has a wonderfully concentrated smokey fruit flavour.
