A warming and spicy barrel-aged gin combining Cotswolds Dry Gin, American oak barrels, candied ginger and fresh orange peel. With notes of warm honey, spicy ginger and piney juniper, this spirited gin has an exceptional depth of flavour.
The recipe consists of juniper berry and several different herbs. Fennel seeds and the rarely used veronica are handpicked from the Estonian countryside. The veronica gives a minty flush and freshness to gin while the fennel seeds give herbal taste to gin.
Its aroma is fresh, crisp, aromatic and complex. There are hints of juniper, lime, grapefruit zest, cumin, aniseed, fennel, yarrow, oregano and mint. In the mouth this is dry, elegant, slightly spicy, fresh. There is also the bitterness of pink grapefruit and the freshness of citrus and herbs.

For this batch, the classic Cotswolds Distillery London Dry Gin is aged in ex-bourbon and ex-red wine casks - the same barrels that the distillery uses for their malt whisky.
Nose - Fruity, woody, and resinous. Intriguing, with a great ability to draw you into the glass.
Taste - Zesty and spiced woody notes - rather vivacious! Rich fruity notes of plum and grape, with cinnamon sugar towards the end.
Finish - Long and lingering; a lovely balance of juniper and black pepper.

Forest's second offering sees the addition of fantastic Earl Grey Tea, sourced from Quinteassential (a small Cheshire based blenders).
The tea is added after distillation allowing its delicate flavours to infuse the gin with an addtional layer of complexity and deliciousness.
The palate of our Chardonnay Barrel Gin is smooth and soft, with a little more sweetness than previous releases. And we’re noticing the development of light cinnamon and nutmeg flavours, along with the trademark ginger from the cardamom.
The barrels continue to contribute the beautiful colour and texture, sitting nicely with the crushed coriander seed, preserved citrus and juniper base.
