Designed to showcase the complexities of Canadian rye whisky, this product has been matured in new, charred American oak casks. Its rich profile includes notes of rye bread, vanilla, spice and orchard fruits.

Lot No.40’s use of 100% rye is unusual in modern whisky production as the flavoursome grain is difficult to process. The brand’s ancestral production techniques are based on those used by whisky makers in early Canada.

Made up of 54% of the 2019 harvest, Collection 244 is an ode to taste and drinking pleasure. Each year, the Cellar Master composes a new symphony, inspired by the tonalities of the year and then adds the wines from the Perpetual Reserve and the oak-aged reserve wines. The Perpetual Reserve makes up a significant proportion of the Collection blend and provides its balance and freshness. In Collection 244, it represents 36% of the blend. In parallel to this Perpetual Reserve, 10% of wines from previous years and young plots on the Cristal estate, aged in French oak foudres, are added to the blend.

Whilst Loureiro is one of the main, and best, grapes used to make Vinho Verde it hasn't achieved quite the fame that Alvarinho has yet but it well worth trying. Alongside bright grapefruit notes, with hints of white blossom, there's a minerality that adds a richness and lovely weight on the palate. Very clean, fresh and moreish.

The Pinot Noir grapes come from the family-owned ‘Someone’s Darling’ vineyard on the Bendigo Loop Road in Central Otago. This vineyard has been placed in conversion to organics (March 2022). This is a delicious Pinot Noir, with fleshy black plum, layers of cherry and sweet berries that play on the palate and dance with hints of violet and savoury notes.

Manually harvested, the grapes are then pressed in a pneumatic press and then transferred to refrigerated vats overnight to allow the sediment to settle. The fermentation starts naturally in the vat and is allowed to continue until the alcohol reaches about 6% . After a light filtration, the wine is bottled and the fermentation goes on, generating the C02 that forms the bubbles until the yeasts are actually killed by the pressure in the bottle (4 bars).

The bottles are then disgorged to remove yeast.

Nice pink color, subtle red fruit aromas. Nice attack, with a slight foam and bubbles. Its sweetness and its delicate aromas make it the perfect aperitif or dessert wine.

Manoir du Carra

Christophe Cordiers estate comprises of 30-odd hectares over a number of village appellations in Mâconnais region, including Mâcon-Fuissé Pouilly-Fuissé and Saint Veran. The full bunches undergo a gentle pressing then fermented without decantation using native yeasts. Exotic and spicy aromas this is well-balanced, with herbaceous and floral notes. This wine is light, charming and fresh.

Alpha Estate is located in Amyndeo, North West Greece. This pristine estate in the cool highlands of Western Macedonia comprises 220 hectares of privately owned single block vineyards, which are certified sustainable, and employs the most up to date vineyard techniques.

The Malagouzia grapes come from a single vineyard site, known as "Turtles" because it is a nesting site for the local turtle population. The vineyard covers 36.35 hectares in the Amyndeon plateau. The vines are grown at an altitude of 620 to 710 metres above sealevel. Planted at a density of 5,900 vines per hectare, they yield 65 hectolitres per hectare, following green harvest and selection. The soil is sandy to sandy-clay over limestone which offers the vines excellent drainage. When the grapes have reached optimal maturity, they are hand-harvested in 15 kilogram baskets, to preserve the quality of the fruit.

The grapes were destemmed, carefully sorted and then lightly crushed, before being cold soaked with skin contact. The must was fermented in temperature controlled stainless steel tanks and was then maintained on its fine lees or "sur lie" for two months with regular stirring, imparting a creamy texture and added complexity to the wine

A lively nose of grapefruit, nectarine and hints of almond blossom leads to a richly textured palate, has superb length, balance and plenty of finesse. Bright and zesty on the finish.
