A bit funky this- wild fermented on all the lees with the aim of some managed oxidation in French barriques for about 18 months; then starting utilising some sort of mini-solera system some Dunk 2021 is added in, racked to used barrels and left for a further 12 months again with a bit of oxidation. The wine is bottled at the point that all notes, flavours, smells, anything you like related to Sauvignon Blanc have disappeared. There is no flor, just a naturally furry crust!

Thoughts of Pina Colada transition from an idea to inescapable, and fragrant honey is ever-present. The palate is no less robust, with fresh Lemon acidity, racing in defence of balance.
