Twelve month barrel-aged keeved cider from 2021, blended with naturally sweet keeved cider from the following season. Brown's Apple brings refreshing acidity to complete the balance. Made in collaboration with chef Merlin Labron-Johnson, for his Michelin starred restaurant Osip in Bruton, Somerset.

Pilton Cider was founded by Martin Berkeley within the cider heartland of Somerset. They are known for making superb whole juice sparkling ciders using the traditional method of ‘keeving’; an artisan practice of making naturally sweetened cider, principally from cider apples. A plethora of apples are gathered from selected traditional cider orchards in and around the parish of Pilton and are slowly fermented for 6 months before they are stored within the cidery’s impressive Victorian cellar prior to bottling..

Pilton Cider

Alice is a medium-dry well-rounded cider with a moreish sharpness. At 4.6% she sits at the drier end of their core range yet is still smooth and mellow with a very slight tart finish; a result of the balanced blending of Celtic Marches homegrown cider apples. This cider is a true Herefordshire delight!

After a career in major cider manufacturing and a break to bring up her young family, Susan Vaughan decided to join her brother Robert Hancock’s back on the family farm in Bishops Frome Herefordshire. The family has been growing fruit and hops on the farm for over 100 years. Their farming roots go back deep into Mid Wales and the Welsh borders where many of their family still farm today. They are now drawing on that heritage and the abilities acquired from a history in the cider and brewing industry to produce quality ciders on the family farm.

Celtic Marches

Beautiful to the core, this palate pleasing medium cider is far from mediocre. Molly is a meticulously balanced cider with a golden glow. This scrumptious sip is smooth, well rounded and has a wonderful apple nose; a signature quality of Celtic Marches homegrown Herefordshire Cider apples. Molly’s bittersweet and bittersharp mash includes Dabinett, Harry Masters, Ashton Bitters and Three Counties.

The Wilce family have been making cider near Ledbury for at least 6 generations (albeit mostly for their own pleasure!). This long-standing family of cider makers now produce award winning premium cider and apple juice for everyone to enjoy, using fruits from their own orchards that they wash, mash and press before leaving nature to take its course with a slow, winter fermentation. After roughly six months, Brian Wilce, their very own Master cider maker, blends by taste before each cider is bottled or bagged. Wilces avoid using chemicals, added yeast and added water in their full strength products, and nor do they add sulphites choosing instead to use only those naturally occuring in the apples. Wilce’s cider is refeshingly traditional and has the unique PGI (Protected Geographical Indicator) classification for Herefordshire ciders. That’s the ultimate in provenance!
