Idle Assembly Rum is inspired by time spent in Dunmore Town on Harbour Island in the Bahamas, where one of the founders, David Flint Wood, has lived for almost thirty years.
A premium blend of rums from Trinidad, the Dominican Republic, Venezuela, and Panama aged in ex-bourbon, white oak barrels for between 5 and 20 years and bottled at 43% without any additives
Warm oak spices, giner and cacao nibs on the nose followed more clove and cinnamon spicey notes, raisins, dried figs and maple syrup on the palate. It's not particualrly sweet but smooth and great as a sipping rum but does make amazing cocktails (see the Whitebox x Idle Assembly pre-made cans).

ucked away on a tributary of the Mosel, Andreas Adam’s immaculate south-western facing vineyards owe a certain amount to the inhospitality of the region. The steep slopes antd harsh working conditions encouraged many younger folk to abandon their family estates in the 1970s and 80s and seek an easier life in the cities – Andreas’s parents included. By the time Andreas had graduated from Geisenheim, prices had dropped to a level which allowed him to assemble 5 ha of prime vineyard on which to work his magic. This is classic “off-dry” German Riesling, beautifully aromatic with notes of lime and grapefruit. Serve with light starters or, personally, I’d have it just on its own as an aperitif.

"This must-try Indian whisky comes from a village distillery running on renewable energy in the foothills of the Himalayas. Former Amrut master blender Surrinder Kumar demonstrates his unerring sense of balance, pace, and control over the fast-maturing single malt, which is distilled from organically grown six-row Indian barley indigenous to Rajasthan. Flavors of vanilla, citrus peel, baked peach, hazelnut, and cassis attest to the complex contributions from the first-fill bourbon, French wine, and Pedro Ximénez sherry casks"

The Mellot family’s wine trade pedigree extends as far back as 1513 and their name has been associated with Sancerre since Cesar Mellot was appointed Louis XIV’s “wine counsellor, presumably a pretty good gig to have back in the 17th century – probably less so 100 years later. Suffice to say that the family survived the wrath of Madame Guillotine and are now one of the Loire Valley’s most respected players. Some 50 miles to the west of Sancerre, Reuilly is classic Loire Sauvignon country, its wines mineral and mouthwatering and providing the perfect foil to seafood or goat’s cheese.

A Rhône Valley style, with fully ripe Shiraz characters of blood plum and ripe black cherry fruit balanced with the exotic Viognier aromas of citrus blossom and rose petal. In Keith's own words ‘Viognier is like Chardonnay on steroids!’ and when married together with Shiraz these two varieties combine magically to produce a palate with richer aromatic charm, warm briar berry spice and a velvety medium-bodied balance. With a rich, ripe black-fruit softness on entry, and smooth roundness and chocolatey softness onto the finish. Adding to the mix is the finely integrated weave of supple oak, and a delicate floral hint of violets and rose-petal resulting in a beautifully complete blend.

Our first gin is to greatest possible extent produced out of Swedish, carefully chosen, organic ingredients. Which have all been treated thoroughly by hand and then distilled in the classic pot-still at Mackmyra Bruk.
Juniper and raspberry, with a hint of coriander, create a sensation of Swedish forest. The scent hints of sweet vanilla and cardamom. And with the aftertaste, we’re introduced to distinct, lingering tones of citrus. Enjoy this Gin just as it is, on the rock's, or in a classic Gin & Tonic.

This is from a variety of parcels on the ‘Butte de Chaume’, predominantly from younger (10-12-year-old) vines and predominantly from schist soils. The depth and luxurious texture from these vines is absolutely astonishing and seems all the more remarkable when you know that the wine is fermented and aged only in stainless steel. Harvesting is in small boxes and the grapes are cooled before a long, slow (4.5hrs) pressing in the cool room. Wild yeast ferment, partial Malo. Even at this ‘entry level’ and despite all the richness on show, this wine is beautifully precise and has exciting, bright, engaging acidity at the finish. It’s probably about twice the price of ‘yer average’ Anjou Blanc… which makes it quite outstanding value!

Grenache and Syrah harvested together and co-fermented in concrete with native yeast. Pulp and skins from Roussanne which was harvested for a straight white wine 10 days earlier (also co-fermented). Mourvèdre comes in 2.5 weeks later and with much lower Brix so we leave some Grenache and Syrah hanging to over-ripen and co-ferment with the Mourvèdre. This helps reduce the green notes that Mourvèdre can sometimes produce. The blend is made as soon as all the wine is pressed. Aged in concrete (lined, so neutral).
Fresh and easy drinking with the acidity and tannins to help the wine age over the years to come. Drink now or hold your peace for 5+ years! Grenache provides the fruit-forward part of the wine and also some grippy tannins, with Syrah adding structure and color. Mourvèdre adds elegance and finesse, and the Roussanne helps add some roundness and mouthfeel alongside a slightly tropical kick.
£22.50
Hand-picked grapes. Open-top bin fermentation with native yeasts. 14 days from picking to pressing, no extended maceration. Some fairly typical savoury notes of tomato and sour cherry, but counter-balanced by the fruit-forward nature of the style of wines we produce. Tannins and acidity will help the wine age gracefully for several years or it can be enjoyed immediately.
