The work of Norrel Robertson MW — the self-styled “Flying Scotsman” — this is exactly the kind of left-field Spanish white we adore. Depending on the vintage, the blend shifts between old-vine Garnacha Blanca, Macabeo and sometimes a splash of Pedro Ximénez, but the style remains constant: mineral, savoury, gently aromatic and utterly captivating. Think pear skin, fennel, wet stone and a twist of Mediterranean herbs. A wine for thinkers, talkers and late-night philosophers.

Classic Cotes du Rhone red. Punchy spicy palate with hints of red and cassis fruit. Especially good with rich meals.

The long wild yeast ferment provides bready aromas and additional complexity to the wine. Dried herbaceous notes, including fennel and aniseed from the nearby Fynbos, dominate the nose, followed by a creamy lemon character. The palate is reminiscent of the nose, with great textural complexity (attributable to the long, slow wild yeast fermentation), and more herbal characters.
