The Wildeberg estate, set up on a mountain overlooking Franschhoek on the edge of the Western Cape is a paradise for wine and nature lovers alike. Home to 4 endangered Fynbos species there is a real focus on sustainability and working in tune with the planet. This beautifully poised Chardonnay is a masterpiece of elegance and balance – just one 600l Stockinger barrel made (Stockinger is an uber-trendy Austrian cooperage) so don’t expect a mouthful of toasty oak, it’s much more subtle than that. Take it slowly and let the flavours evolve.
