The recipe consists of juniper berry and several different herbs. Fennel seeds and the rarely used veronica are handpicked from the Estonian countryside. The veronica gives a minty flush and freshness to gin while the fennel seeds give herbal taste to gin.
Its aroma is fresh, crisp, aromatic and complex. There are hints of juniper, lime, grapefruit zest, cumin, aniseed, fennel, yarrow, oregano and mint. In the mouth this is dry, elegant, slightly spicy, fresh. There is also the bitterness of pink grapefruit and the freshness of citrus and herbs.
