Through distillation the asparagus delivers an earthy, nutty-sweetness on the palate. The asparagus is sourced from Revills Farm, one of the leading asparagus producers in Worcestershire. This blend of botanicals, enhanced by local brine salt that's added during the distillation process, complements its characteristics wonderfully.
Three traditional British berries - Blackberry, Bilberry, Sloeberry - combine with juniper and supporting botanicals to create our beautifully flavoured Bumbleberry Gin. Packed with fruitiness yet wonderfully smooth.

Blood Oranges are a prized variety in Sicily, their rich red colour develops from the cool Mediterranean nights. The Blood Orange peels are steeped in alcohol and pressed in a basket press. The nose is a bright, pine lime splice mingling with fresh pine needles and split gum leaf. The palate is fragrant and drying, with bold juniper making way to peppery menthol and an earthiness. The finish is long and oily, with bags of juniper and citrus oil remaining long after the alcohol evaporates.

A pure juniper distillate is then collected and blended into a base made from Never Never's triple juniper process (juniper is steepd in the spririt for 24 hours, that juniper is then removed and replaced with fresh juniper prior to distillation and, as if that isn't enough, more juniper is added to the vapour basket).
Bottled at the official navy strength of 58%, this gin is long, complex and viscous.
High levels of clouding occur when mixed, due to massively elevated juniper levels.
All of the base distillate comes through the ‘Coffey Still’, a traditional continuous still which produces Nikka's signature grain whiskies, giving this gin a silky texture and rich body. Its aromatic complexity relies on the delicate balance of various botanicals including Japanese citrus such as Yuzu, Kabosu and Amanatsu. There is also a touch of apples, a fruit deeply related to the history of Nikka, followed by pleasantly tangy hints of Japanese Sansho pepper on the finish.

Squid Ink is such a powerful ingredient that only a minimal amount is needed both for the distilling and colour or infusion of the gin. Vanilla was added to the base of the recipe to give a well rounded mouthfeel and perceived sweetness , coupled with sea buckthorn for a tart, fresh fruit finish.

Drawing inspiration from the aromas, flavours and lifestyle of the Mediterranean, Rose Sainte Marie is named after the iconic lighthouse that marks the Southern entrance to the Old Port of Marseille, from which the 19th century Salcombe Fruit Schooners would load citrus fruits and herbs bound for the UK.
Fragrant notes of fresh lemon peel and Provence herbs are complemented by the natural sweetness of red fruit and the distinctive perfume of white flowers and orange blossom. Mulberry Gin is made by combining Mulberries with Stratford Gin and leaving them to steep for several months before decanting and bottling. The result is a deep rich fruity Gin ideal for sipping or using in cocktails.
Mulberries are one of those fruits that you will never see in the supermarket as they are just too fragile. They drop from the trees and go to mush very easily, in fact they make the raspberry look like a real tough cookie.
